Abstract
Surabaya City is one of the cities in East Java Province with a relatively high level of activity and birth rate. Along with the growing population, the community's demand for food also increases, especially in terms of the need and preference for consuming UHT milk. Consumer preferences for UHT milk are influenced by various factors such as flavor variants, price, packaging material, expiration date, nutritional content, and other attributes. This study aims to determine the most important attributes for consumers in choosing UHT milk products and to identify consumer preferences for the attribute variables of UHT milk. The attributes used in this study include packaging material, flavor variants, price, expiration date, and nutritional content. The research was conducted using a survey method, with the number of respondents determined using the Slovin formula, and the respondents selected through cluster sampling techniques. According to the consumers, the preferred UHT milk product is one that uses can packaging material with a utility value of 0.167. For the price attribute, the preferred range is under IDR 5000 with a utility value of 0.220. The flavor attribute most preferred is chocolate, with a utility value of 0.369. For the expiration date, the preferred shelf life is more than 6 months (before opening) with a utility value of 0.060. The final attribute, nutritional content, shows that consumers prefer high-protein UHT milk with a utility value of 0.208. The most preferred combination of UHT milk attributes is found in stimulus design number 14, which includes: can packaging, price under IDR 5000, chocolate flavor, shelf life of less than 6 months, and free-lactose nutritional content
