Abstract
The raw material inventory control system for red papaya in cocktail products at the Cocktail Agroindustry is not yet optimal, as indicated by high inventory costs and frequent stock shortages that hinder production. This study aims to analyze raw material inventory control, including identifying the causes of shortages, stock regulation, and determining optimal ordering requirements and timing, using the Fishbone Diagram, Min-Max Method, and Material Requirements Planning (MRP). The research findings reveal that supply shortages are caused by inaccurate inventory planning, suboptimal cultivation methods, raw materials failing quality control, lack of real-time monitoring, and external factors such as weather. The Min-Max Method analysis uncovers fluctuations in safety stock, minimum stock, and maximum stock from 2019–2024, with the highest maximum stock of 442,330 kg in 2020, highlighting the need for adaptive stock control. The optimal raw material reorder point using the LFL method shows an ordering frequency of 52 times per year with total inventory costs of Rp780,000.00, whereas the company's policy results in 160 orders per year with total costs of Rp6,150,000.00.
