Abstract
Piper nigrum l. known as black pepper. Black pepper is a native plant Indonesia which also grows in Malaysia, Sri Lanka, Vietnam and other countries throughout Southeast Asia. Black pepper can be used to produce the product industries such as food, beverages and cosmetics. Black pepper has the potential to be utilized oleoresin from seed extraction. Ultrasound Assisted Extraction is one method to increase the yield and efficiency of oleoresin extraction. Research purposes This is to test the effect of extraction time and temperature on the results, density and refractive index, assessing chemical components and reviewing relative results best according to SNI 01-0025-1987-B. Black pepper powder is extracted with Ultrasound uses ethanol solvent. The extraction time used is 20, 35, 50, 65, and 80 minutes. The second variable is carried out using various temperatures extraction 30, 40, 50, 60, and 70 ˚C. Extraction conditions are carried out based on the ratio of ingredients to dissolve 0.37 b/v at a frequency of 40 kHz. The research results show that the longer the extraction time and the higher the extraction temperature, the higher the extraction temperature The resulting yield, density and refractive index will be greater. Results the best relative was obtained at the research variable 80 minutes 70˚C. with color dark chocolate, liquid paste, typical pepper aroma, yield 22.57%, density 0.8350 gram/ml, piperine content 74.78%, essential oil content of 25.22%, and a refractive index of 1.4900.
