Abstract
UD Saputra Jaya is one of the milk-producing industries largest in Jombang district, it allows this company producing liquid cow's milk with a capacity of 10 tons per day or it can be interpreted 3650 tons per year. Currently UD Saputra Jaya is still exporting its milk to PT Indolakto as a result of its production, but this company does not allow it will develop into a larger business and manufacture dairy products into a new product, namely ice cream. In the process of making ice cream from The development of the liquid milk industry requires several stages to change it into a solid, this stage certainly goes through several changes in the product phase from water, a viscous transition, then to a solid. These changes are due to treatment product into an industrial device that allows physical changes to occur. The process begins with storing milk using storage tanks and proceed with mixing, homogenization, cooling, aging, freezing, filling and hardening. This home industry scale ice cream production process certainly requires review to be developed into an industry that has more capacity especially on each tool because there are certain conditions before entering next tool. This requires a larger workforce previous industry and of course requires a skilled workforce to handle new product production process for the next day.
