Abstract
The design of the mozzarella cheese factory is an activity of designing a mozzarella cheese factory which will be established in Kalipucang Village, Tutur, Pasuruan, East Java to be precise in Kampoeng Susu. This mozzarella cheese factory was established to increase the economic value of milk and to create village superior products. In addition, the establishment of a mozzarella cheese factory is expected to improve the economy of the village community. The raw material for the mozzarella cheese factory is cow's milk, where cow's milk is the main commodity of Kalipucang Village in abundant quantities. The design of the mozzarella cheese factory is carried out from the first week of June to the first week of July. The pre-design activity for making a mozzarella cheese factory from cow's milk on a pilot plant scale is planned to be built in one area, namely Kampoeng Susu, an educational tourist attraction located at Kuntul Utara, RT.04/RW.02, Muncangan, Kalipucang, Kec. Tutur, Pasuruan, East Java. The preparation of the factory manufacturing plan was carried out in several stages, namely survey, preparation, data collection, data analysis, and reporting. From the plan to make a mozzarella cheese factory, it will be carried out with a production capacity of 25,000 kg/year, namely 75.75 kg of mozzarella cheese produced a day. This has been adjusted to several factors, including the market demand factor which has recently been increasing due to the trend of using mozzarella cheese in various food preparations. The total investment needed for the process of making mozzarella cheese is obtained from 40% personal funds and 60% from loans to third parties.
