Abstract
Petis kupang is a traditional home-processed food product from Balongdowo Village, Sidoarjo, made from kupang (a bivalve mollusk). As filter feeders, kupang have the potential to accumulate pathogenic microbial contamination and heavy metals from the waters in which they live. This study aimed to identify total microbial count, Escherichia coli, Salmonella sp., and Vibrio cholerae, as well as the heavy metal content of Pb, Cu, Cd, and As in petis kupang from Balongdowo Village. This was a descriptive study employing a laboratory testing approach, using a purposive sampling technique on five producers who met the study criteria, with the results compared against SNI 2718.1:2013. The results showed that all petis kupang samples tested negative for Escherichia coli, Salmonella sp., and Vibrio cholerae, thus meeting food safety requirements. Similarly, all samples were below the threshold limits for Pb, As, and Cd, namely a maximum of 1.0 mg/kg for As and Cd, and a maximum of 0.5 mg/kg for Pb. Total plate count (TPC) values ranged from 3.484–8.145 log CFU/g, with 4 of 5 samples (80%) exceeding the SNI threshold of a maximum of 5.0 × 10³ colonies/g; and the Cu content of one sample (PK 4) was recorded at 2.61 mg/kg, exceeding the maximum limit of 2.00 mg/kg. Thus, petis kupang from Balongdowo Village can be classified as safe from specific pathogenic bacteria and most heavy metals; however, improvements are still needed in production sanitation practices and monitoring of copper contamination sources at certain producers.
