Abstract
The objectives of this study are to determine the added value derived from banana processing, evaluate the business's financial viability, and examine consumer preferences for banana chip products. A quantitative descriptive strategy was used in this study. Fifty customer questionnaire surveys and interviews with the business owner were used to gather primary data.Consumer preferences were analyzed based on product attributes, including taste, price, texture, and packaging. Financial feasibility analysis included production costs, revenue, income, R/C Ratio, and profit margin, while added value was analyzed using the Hayami method. The results indicate that taste is the most prioritized attribute for consumers. The banana chip business is financially feasible with an R/C Ratio of 1.66 and a profit margin of 39,8%. The added value generated is IDR 19.974 per kg banana chips with an added value ratio of 55,07%, categorized as high added value.
