Abstract
This research aims to identify the level of waste and provide improvement proposals in the chicken carcass production process at PT CAS. The main problem faced by the company is the presence of various types of waste such as defects, waiting, overproduction, inventory, unnecessary motion, transportation, and overprocessing, which impact low production process efficiency. To address these issues, the Lean Manufacturing approach is used with Value Stream Mapping (VSM) and Value Stream Analysis Tools (VALSAT) to identify waste, supplemented by a Fishbone Diagram to find the root causes of waste and provide improvement recommendations using Failure Mode and Effect Analysis (FMEA). The research results show that there is still a dominance of non-value-added activities that cause inefficiencies in the production process. The main wastes found include Unnecessary Process, Defect, and Waiting. Suggested improvements that can be provided are implementing a Stunning SOP based on chicken weight classification, scheduling the arrival of raw materials, performing preparation before production, and conducting grading in the cage to meet customer demands. With the implementation of these proposed improvements, it is expected to reduce waste, increase production time efficiency, decrease the number of defective products, and improve the overall performance of the production process at PT CAS
