Abstract

The consumption of sweet soy sauce in Indonesia tends to increase every year. Soy sauce is an agricultural product made from soybeans and palm sugar, and its production process requires the continuous availability of raw materials in terms of quantity, quality, and timeliness. One of the soy sauce agro-industrial companies is CV Jeruk Pecel Tulen Surabaya, which faces several constraints, including uncertainty in raw material supply, price and supply fluctuations, and the absence of an optimal raw material inventory system, resulting in an imbalance between the availability and the demand for raw materials. This study aims to describe the inventory mechanism, analyze the optimal order quantity of raw materials, analyze the level of safety stock, analyze the appropriate reorder point, and formulate recommendations for an optimal procurement system. This research employs quantitative methods, namely the Economic Order Quantity (EOQ), Safety stock, and Reorder point, to calculate the optimal raw material ordering requirements. The raw material procurement process begins with checking warehouse stock, making ordering decisions, placing orders with suppliers, receiving and storing raw materials, and recording inventory. The results of the EOQ analysis show that the EOQ for soybeans is 1,720 kg, while for palm sugar it is 30,451 kg. These values indicate the most economical order quantities for soybeans and palm sugar, thereby minimizing the total inventory costs incurred by the company. The implementation of the EOQ method was found to reduce the annual total inventory cost of soybeans from Rp3,407,500 to Rp2,734,460, representing a reduction of 19.76% compared to the system currently applied by the company. Meanwhile, the total inventory cost of palm sugar decreased from Rp2,053,750 to Rp334,963, resulting in cost savings of 83.7%. The company is recommended to implement the EOQ method as the basis of its raw material procurement system, as this method has been proven to determine optimal order quantities, minimize the risk of stock shortages and excess inventory, and significantly reduce total inventory costs.
