Abstract

PT Ajinomoto is one of the companies operating in the food industry. Its main products are MSG and various food products such as Masako, Sajiku, Saori, and Mayumi, as well as by-products in the form of liquid fertilizers, namely Amina, Ajifol, and Ajiplus. In the production of MSG, the primary raw material used is cane molasses, which is a by-product of the sugar industry. In addition to cane molasses, glucose derived from beet molasses and raw sugar is also used. In general, the MSG production process consists of several stages, including decalcification, fermentation, isolation, purification, drying, and packaging. The decalcification process in the treatment of cane molasses aims to remove calcium content that can cause turbidity in the product. The fermentation process employs the bacterium *Brevibacterium lactofermentum* because of its ability to produce glutamic acid in high yields. Isolation is the separation of MSG obtained from fermentation from other undesired materials, with the purpose of purifying glutamic acid that is still mixed with the mother liquor. This stage includes acidification (first crystallization), first separation, washing, crystal conversion, and neutralization. The purification process is the final stage in MSG production and consists of three steps, namely decolorization, second crystallization, and second separation.
