Abstract
PKL was carried out at PT. Sinergi Gula Nusantara PG. Pesantren Baru Kediri with the aim of understanding the sugar production process flow and the application of mass balance in the field. Specific tasks carried out included calculating the mass balance at the milling, purification, and evaporation stations. The calculation results showed that the milling station had good juice extraction efficiency, the purification station was able to reduce impurities as required by the process, and the evaporation station successfully increased the juice concentration to the point where it was ready for crystallization. Overall, the mass balance can be used as a basis for evaluating process performance in the sugar industry.
