Abstract
The International Coffee Organization (2021) reported that Indonesia’s coffee consumption reached a record high in 2020/2021, making the country the fifth-largest coffee consumer in the world. Bali also plays a significant role as a major producer, with Bangli contributing 2,173 tons in 2021 (Muhammad & Widhianthini, 2024). This rise in consumption aligns with the growing number of modern cafés (Hardiyanti, 2024). The trend is further supported by the high volume of domestic tourist visits, reaching 1,794,267 trips in November 2024, with Badung accounting for the largest share at 27.65% (NusaBali.com, 2025), known for its prime areas such as Canggu (Mulyana et al., 2020). Against this backdrop, this study was conducted at Gigi Susu Café in Canggu to analyze the influence of café atmosphere and food quality on repurchase intention, with customer satisfaction serving as an intervening variable. Café atmosphere and food quality are considered to play essential roles in shaping customer satisfaction and encouraging repeat purchases. This study employed a quantitative approach using accidental sampling. Data were collected through questionnaires distributed to domestic tourists who had previously made purchases at Gigi Susu. The data were then analyzed using Partial Least Square–Structural Equation Modeling (PLS-SEM) to examine both the direct and indirect relationships among variables. The findings indicate that café atmosphere and food quality have a positive and significant effect on repurchase intention, both directly and indirectly through customer satisfaction as an intervening variable. Customer satisfaction also directly influences repurchase intention. These results contribute to the development of marketing management theory and practice, particularly within the culinary industry.
