Abstract
The utilization of gadung tubers as an alternative food source has limitations due to the presence of cyanide, which can cause poisoning. Cyanide in gadung tubers exists in the form of cyanogenic glycosides that can be enzymatically hydrolyzed to form hydrocyanic acid (HCN). The average cyanide content in gadung tubers is around 362 ppm, while the safe consumption limit of hydrocyanic acid is ≤ 10 ppm. This research aims to reduce the hydrocyanic acid content in gadung tubers through a maceration extraction process using a combination of Sodium Bicarbonate (NaHCO₃) and Sodium Chloride (NaCl) solvents to meet the World Health Organization (WHO) standards. Gadung tuber extract is obtained from maceration extraction for 30 minutes in each solvent. Methods for testing hydrocyanic acid in gadung tubers include Titrimetry, Spectrophotometry, and Organoleptic testing. High concentrations of Sodium Bicarbonate (NaHCO₃) and Sodium Chloride (NaCl) can effectively reduce the hydrocyanic acid content in gadung tubers. The initial hydrocyanic acid content of 47.02 mg/kg can be reduced with the best concentration combination (10:15)%, where the titrimetry analysis result is 9 mg/kg, and the spectrophotometry analysis result is 9.5 mg/kg. This indicates that the hydrocyanic acid content can be reduced by 80-81%, meeting the World Health Organization (WHO) standards.
