Abstract
One of the efforts to encourage the growth of the halal food industry is by raising public awareness about the importance of consuming halal food. Biscuits are one of the food products with promising prospects. Biscuits are widely consumed by the public as daily snacks and on major holidays, such as Eid al-Fitr, Christmas, and Lunar New Year. This study aims to analyze the factors influencing halal awareness among biscuit product consumers in Surabaya City and to identify the most influential factor. The data analysis method used is Partial Least Squares Structural Equation Modelling (PLS-SEM) using the SmartPLS 3 application. The data collection method used is a Likert scale questionnaire distributed directly to 225 respondents across Surabaya City. The results show that the factors of the role of halal certification, halal exposure, health reason, and religious belief have a positive and significant influence on the halal awareness of biscuit product consumers in Surabaya City. All factors in this study can increase halal awareness among biscuit product consumers in Surabaya City. The most influential factor is health reason as evidenced by the high t-statistics value (4.432) and a low p-value (0.000).
