Abstract
Shelf life of food products is one of the information that must be included in food product packaging as a form of consumer protection against food safety. In “Halawa” beef flavored seasoning, shelf life is an important component related to product quality degradation, especially the texture attribute. The powder-textured characteristics of “Halawa” beef flavored seasoning are easier to absorb moisture from the environment. Estimation of shelf life using the Accelerated Shelf Life Testing (ASLT) method of critical moisture content approach is used to determine the shelf life of products that are susceptible to damage due to moisture absorption. The purpose of this study was to estimate the shelf life of “Halawa” beef flavored seasoning products using the Accelerated Shelf-Life Testing method using the critical moisture content approach. The shelf life estimation method used is Accelerated Shelf-Life Testing critical moisture content approach. The results of the research showed that the initial moisture content of “Halawa” beef flavor seasoning was 0.0066 gH2O/solid, the critical moisture content was 0.0636 gH2O/solid, the Hasley equation model selected had the final equation Log(Ln(1/Aw)) =-1.3435 -0.6872 log Me, equilibrium moisture content of 0.068 gH2O/gsolid, and permeability values of aluminum foil, metalized plastic, and polypropylene packaging of 0.065 gH2O/day.m2.mmHg, 0.214 gH2O/day.m2.mmHg, and 0.4 gH2O/day.m2.mmHg, respectively. The shelf life of “Halawa” beef flavored seasoning using aluminum foil, metalized plastic, and polypropylene packaging was 1100 days, 334 days, and 178 days.
