Abstract

Flavonoids are one of the most important secondary metabolites present in plants that are part of the 2-phenyl-benzyl- γ-pyrone derivative. Flavonoids play an important role in plants, providing color, flavor to seeds, flowers and fruit and can be used as antimicrobial and protection against exposure to the sun's ultraviolet rays. One source of flavonoids is the pomegranate. Pomegranates contain 0.2 – 1% of the weight of the pomegranates, which contain 30% concentrated on the skin. The purpose of this study is to examine the speed of stirring and the timing of extraction of flavonoid content from the pomegranate's pomegranate (Punica grenatum). The flavonoid extraction process can be carried out using an 80% aeston solvent by the stirring method. Such methods can increase the transfer of mass from a material into a solvent. In the extraction process extraction time has an effect on the effectiveness of extraction. Limited time can result in less optimal extraction, while excessive time can affect the extraction results by causing potential damage to the sample. The best flavonid extraction is at 500 rpm and at 180 minutes extraction time with 0.7575% of the flavonoid extracted.
