Abstract
Protein concentrate made from tuna head waste is a concentrated flour-shaped product that has a protein content above 20% and is brownish yellow in color. Protein concentrate is currently needed by farmers as a source of energy to increase protein content to improve the growth and development of livestock. Tuna is found at the bottom of the sea or close to the seafloor with a low salt content and a temperature of 26-28 ° C and lives in groups with a high protein content, so it is used as an ingredient for making concentrates. Making protein concentrate through the maceration extraction process using a mixture of methanol and acetone solvents which are polar compound solvents that can dissolve polar and non-polar compounds in the material. The research variables used variations in extraction time for 2, 3, 4, 5 and 6 (hours) and variations in solvent volume ratio (methanol: acetone) 1:9; 3:7; 5:5; 7:3 and 9:1. The results presented are the yield, heavy metal content of cd and pb using the AAS (Atomic Absorption Spectrophotometry) method, protein content obtained using the kjeldahl method and moisture content using the gravimetric method. The product is a powdery protein concentrate with a brownish yellow color with the best results in the ratio of methanol and acetone solvents (9:1) at an extraction time of 6 hours obtained protein content of 89.15%, yield of 23.86% and water content of 5.57%. The protein concentrate obtained is compatible with SNI 3148.3 2009 with a maximum water content of 14% and a minimum protein content of 30% for laying hens. The high value of protein content and yield and low water content is due to the length of extraction time which causes the solvent contact with the material to be longer, resulting in more fat and oil extracted and the amount of water evaporated in the material.
