Abstract

Cassava starch-based edible film enriched with butterfly pea flower anthocyanins (Clitoria ternatea L.) has the potential to be developed as a colorimetric indicator in an intelligent packaging system for visually monitoring fish freshness. This study aimed to determine the effect of butterfly pea flower anthocyanin addition on the characteristics of cas-sava starch-based edible films, determine the best formulation, and evaluate the ability of the edible film to function as a freshness indica-tor for fish fillets during storage. The study employed a completely randomized design with a single factor consisting of five anthocyanin concentration levels:0%, 3%, 6%, 9%, 12%, with two replications for each treatment. The characteristics of the edible films analyzed includ-ed thickness, tensile strength, elongation at break, Water Vapor Trans-mission Rate (WVTR), pH sensitivity, and color parameters (L*, a*, b*, and ΔE). The data were analyzed using Analysis of Variance (ANOVA) at a 5% significance level, followed by Duncan’s Multiple Range Test (DMRT). The best formulation was determined using the De Garmo effectiveness index method and subsequently applied as a freshness indicator for fish fillets during storage at 0, 6, 12, and 24 hours. The quality parameters of the fish fillets analyzed included changes in edi-ble film color (ΔE), pH, texture, Total Plate Count (TPC), and Total Volatile Base Nitrogen (TVB-N), and their correlations were analyzed using Pearson’s or Spearman’s correlation test.
