Abstract
Coffee is a high value agricultural commodity with steadily increasing demand, making quality control a critical factor in maintaining product quality. Bontugu Trawas Mojokerto Coffee, as a producer of green beans, continues to face the challenge of high rates of coffee bean damage, which has the potential to reduce product quality and market value. This study aims to analyze the types of defects, defect rates, and quality control conditions, as well as to formulate improvement proposals using the New Seven Tools method. The research was conducted from April to May 2026 at Kopi Bontugu Trawas in Mojokerto. The location was selected using purposive sampling. Data were collected through observations, interviews, questionnaires, and documentation, with management and production staff serving as respondents. Data analysis utilized check sheets, histograms, Pareto charts, control charts, and the New Seven Tools methodology, which consists of the Affinity Diagram, Interrelationship Diagram, Tree Diagram, Matrix Diagram, Matrix Data Analysis, Arrow Diagram, and Process Decision Program Chart (PDPC). Research results show that the types of damage found consisted of cracked seeds (50%), hollow seeds (41.5%), black seeds (3.7%), shriveled seeds (3.0%), and moldy seeds (1.8%). The defect rate for each production batch ranged from 11–12%, exceeding the company’s defect limit of 2–7%, and the control chart indicated that the process was not yet under control. Proposed improvement priorities include increased supervision during the production process, data collection at every stage of production, implementation of production SOPs, periodic machine inspection and maintenance, raw material control, and improved cleanliness of production and storage areas. The implementation of these proposed improvements is expected to reduce the defect rate and improve the quality of green beans on a sustainable basis.
