Abstract

This Industrial Field Practice (PKL) was carried out at PT. Mandala Cahaya Sentosa (MCS) in Sidoarjo with the aim of studying and analyzing the industrial-scale production process of instant rosella tea powder. The activities included direct observation of each production stage, starting from the preparation and quality testing of raw materials, weighing, mixing, sieving, packaging, and storage, as well as comparing the process with theoretical literature. The results show that the main differences lie in the types of raw materials used, the processing techniques applied, and the automated packaging system employed in the industrial setting. In addition, the company has implemented good sanitation practices, worker hygiene, and quality control systems, supported by complete production facilities. A HACCP analysis was also conducted to identify potential hazards and determine critical control points to ensure product safety. Overall, this field practice provides practical insights into industrial standards for producing safe, efficient, and high-quality functional powdered beverages.
