Abstract
Glucose syrup is a clear and viscous liquid obtained from the breakdown of starch into simpler compounds whose main component is glucose. One of the abundant sources of starch in Indonesia are tubers such as canna tubers, kimpul and white yam. The starch content in canna, kimpul and white yam tubers was 83.20%, respectively; 80.98% and 74.70%. The purpose of this study was to determine the effect of tuber type and concentration of -amylase enzyme on the quality of the glucose syrup produced. The experimental design used was a completely randomized design with a factorial pattern with two factors. Factor I is the type of tuber (canna, kimpul and white yam), while factor II is the concentration of -amylase enzyme (0.02%, 0.03% and 0.04%). The best treatment was obtained in the treatment of canna tubers with a concentration of 0.04% -amylase enzyme with a moisture content of 14.73%, ash content 0.28%, yield 82.54%, reducing sugar content 70.92%, DE value 87 ,71 , total dissolved solids 86.50°brix , viscosity 1.99 Pa.s , clarity 67.14%T.
