Abstract

The production of coconut in Indonesia which is quite large and increases every year, causes the coconut water produced to increase. To overcome the increasing amount of coconut water is to uses coconut water into bioethanol products with a fermentation process. Bioethanol is ethanol produced from vegetable materials containing carbohydrates, cellulose, or glucose. The material used for the manufacture of bioethanol in this research is coconut water and the yeast used is Alcotec 48 Turbo Yeast. The study of making bioethanol from coconut water with a fermentation process using Alcotec 48 Turbo Yeast, will produce bioethanol which will be analyzed for alcohol content using an alcohol refractometer and will continue with the distillation process to obtain bioethanol with higher levels. The glucose content of coconut water after hydrolysis is 14% (v/v). The best result in the fermentation process are the levels of Alcotec 48 Turbo Yeast 14 g/L and a fermentation time of 6 days which produces bioethanol levels of 37% (v/v), while the best result after the distillation process are at levels of Alcotec 48 Turbo Yeast 14 g/L and fermentation time of 6 days resulted in bioethanol content of 53% (v/v). After optimizing the result using the Response Surface Methodology (RSM) using the Minitab 17 application, the optimum result in the fermentation process were Alcotec 48 Turbo Yeast levels of 6 g/L and a fermentation time of 2 days obtained bioethanol levels of 19,7829%, while the optimum result after the distillation process, the levels of Alcotec 48 Turbo Yeast were 14 g/L and the fermentation time was 9 days, the bioethanol content was 53, 764%.
