Abstract
Gap analysis (GAP Analysis) is one of the methods used to identify how far the processed food industry has gone in implementing a food safety system in accordance with Food and Drug Supervisory Agency regulations Number HK. 02.02.1.2.01.22.63 of 2022 and Regulation of the Minister of Industry of the Republic of Indonesia Number 75 of 2010. This research focuses on food safety systems, namely Good Manufacturing Practices (GMP) and Sanitation Standard Operating Procedures (SSOP) in the micro-level food industry, in Considering the actual performance after carrying out the GAP Analysis, it will be analyzed further using the Root Cause Analysis method using FMEA, and improvements to facilities will be carried out using the 5 Whys Analysis. After carrying out the final GAP Analysis and T-Test testing, the results showed Tcount < Ttable, Tcount = -198.21578 and Ttable, = 1.29944. This final result shows the real difference that occurred before and after the gap analysis was carried out, namely that the implementation of the food safety system was only 50% before the gap analysis was carried out and increased significantly to 98% after the gap analysis was carried out.
