Abstract

Repeated use of cooking oil by traders can cause damage and reduce the quality of the cooking oil, which can be dangerous to health. This research aims to determine the behavior of using cooking oil and the quality of the cooking oil used by street penyetan traders around Menganti and Hulaan Markets. This research is descriptive research with a total sampling method of 25 traders. Sampling was carried out at around 20.00-21.00 WIB, with conditions crowded with buyers. The research results show that 60% of traders use bulk cooking oil, use cooking oil sold in traditional markets (92%), use 1-2 liters of cooking oil each day (60%) with a duration of 1-3 minutes each fry (60 %), never change the oil from opening to closing the shop (92%) and collect used oil to sell to used oil collectors (44%). The results of analysis of the physical and chemical quality of cooking oil used by traders show that samples do not meet SNI 7709:2019 in terms of color parameters (96%), odor (88%), water content (52%), free fatty acids (20%) and peroxide value (96%) and the sample has a higher value than the comparison oil sample for the viscosity parameters (42%) and TBA number (100%). The results of analysis of color, odor, water content, free fatty acids (ALB) and peroxide value can be concluded that the cooking oil samples used by traders do not comply with the cooking oil quality requirements set by SNI 7709:2019. Judging from the peroxide value, the cooking oil used by penyetan traders has a quality level of low criteria (44%), medium criteria (28%) and high criteria (28%).
