Abstract
Noni (Morinda citrifolia) is a plant that is widely used by the community as a medicinal plant. One of the weaknesses of noni is the smell and taste that is stinging and is not liked. Noni juice produced from the ripening process will provide benefits and is a functional food, because it can provide additional benefits besides the basic function of the food in a community group. The purpose of this study was to determine consumer preferences for noni juice by distinguishing storage places. The method used in this research was an experimental study of noni fruit with a curing place for 21 days with three treatments of storage places, namely under sunlight (PM1), the room still has light (PM2), without light (PM3). The results of the treatment were carried out by a hedonic test using 7 scales, namely 1. very dislike, 2. dislike, 3. somewhat disliked, 4. neutral, 5. somewhat like, 6. like, 7. very like. The hedonic test used 30 untrained panelists. The results of this study resulted in the consumer's preferred noni juice in the sun-ripening treatment (PM1) with a mean color of 6.07, aroma 6.33, taste 6.43, antioxidant activity in PM1 treatment 47,04%.
