Abstract

One of the many snacks sold in the school environment is snacks meatballs, this product is easily changed or damaged, one of them caused by microbial contamination. The amount of microbial contamination in the product food can be caused by the seller's low hygiene and sanitation, so lots of meatball hawker sellers add chemical additives which are prohibited from being added to food products, for example borax and formalin.The purpose of this study is to determine whether or not borax and formalin and total microbial contamination based on Total Plate Count (TPC) in Elementary School environment or equivalent Rungkut District. This research carried out by using sampling with the sampling method fed up. The analyzes performed included chemical analysis (borax and formalin) and total microbial analysis using the Total Plate Count (TPC) method. Borax analysis results and formalin using the easy test kit method, namely a total of 20 (100%) samples of meatball snacks in Elementary School environment or the equivalent Rungkut District has results negative (-) or does not contain borax and formalin. Number calculation results Total Plate Count (TPC) on day 0 as much as 35% fulfilled the SNI requirements namely at SDN Kalirungkut I 264, SD Sinar Mulia Indonesia, SD Yamastho, SD Islam Jiwa Nala, SDN Medokan Ayu I 270, MIS At-Taqwa, IES Supervisor and MIS Muhammadiyah 27, while samples that do not meet the SNI requirements are by 65%.
