Abstract
Health and environmental problems can be caused by excessive plastic waste, for that the demand for environmentally friendly packaging can guarantee the safety of food products such as edible films is starting to increase. Edible films produced with natural ingredients such as pectin from papaya plants and chitosan from shrimp. This study was to determine the best composition in the manufacture of edible films using pectin from papaya peel and chitosan from shrimp shell waste with the addition of glycerol. Pectin and chitosan were mixed together with glycerol to become edible film. This research, was finally obtained the characteristics of edible film include the highest tensile strength value in the chitosan-pectin ratio of 7:3 with 1% glycerol concentration of 1.947 MPa and the highest percent elongation value was seen in the 3:7 chitosan-pectin ratio with 3% glycerol concentration, is 19.30% and the percent value of biodegradable all edible films according the standard, which is above 50%. RSM (Response Surface Methodology) method is used. The optimum results are obtained in the composition ratio of chitosan-pectin 5:5 with a glycerol concentration of 2.5% with a tensile strength value of 0.392 MPa, an elongation value of 9.466% and a biodegradability of 84.12%
