Abstract

Star fruit leaves grow a lot in Indonesia, star fruit leaves or Averrhoa bilimbi L can be used as medicine but their use is not optimal.  Star fruit leaves contain flavonoids, this plant can be used as a medicine including high blood pressure, and improve digestive function. The flavonoid extract is then encapsulated. Maceration extraction of star fruit leaf powder using ethanol solvent with concentrations of 50%, 60%, 70%, 80% and 90% with maceration temperatures of 30⁰C, 40⁰C, 50⁰C and 60⁰C, where the macerated product is separated between the extract and the residue, then the extract is analyzed for flavonoid levels.  Flavonoid extract is encapsulated using a sucrose binder so that it can last for a long time using Rotary Vertical Encapsulation, namely by taking an extract of 150 cc plus 300grams of liquefied crystalline sugar then heated at a temperature of 80⁰C at Rotary Vertical Encapsulation with a nickel heater rotated at a speed of 200 rpm to form which is then analyzed flavonoid levels. The highest content of flavonoids in the extract was obtained at a temperature of 70⁰C using an ethanol concentration of 90% obtained flavonoid levels of 16.05 mg / 100 gr and the lowest level obtained at a temperature of 30⁰C with a concentration of 90% of 10.31 mg / 100 gr, while after the encapsulation process at the lowest and highest flavonoid extract levels, it was seen that flavonoid levels decreased where the lowest levels at a temperature of 30⁰C with 90% ethanol were 9.00 mg / 100 gr and  flavonoids are highest at 70⁰C with an ethanol concentration of 90% which is 14.75 mg / 100 gr.
