Abstract

Food waste can be interpreted as a process of reducing the quantity of food at each stage of the food supply chain, especially for the types of food consumed by humans. The DTC Wonokromo traditional market, as one of the large markets managed by the Pasar Surya Regional Company, has a proportion of vegetable and fruit waste of 87% of the total organic waste. This study aims to help determine the appropriate processing strategy by directly measuring the quantity of waste generation. Data volume and composition are obtained by manually weighing and sorting. Environmental impact analysis was carried out using SimaPro software version 9.2.02. The LCA analysis methods used are RECIPE and Cumulative Energy Demand (CED). The average total food waste produced at the Wonokromo Market is 154.6 kg per day, while it is 152.7 kg per day at the Mangga Dua Market. This number includes only the categories of vegetables, fruits, starchy foods, whole grains, oily fruits and grains, and meat. The resulting product categories in the TPA processing scenario are global warming of 24890 kg CO2 and stratospheric ozone of 0.000095 kg CFC11; the compost scenario produces a global warming impact of 859.2 kg CO2 and stratospheric ozone of 0.0154 kg CFC11; the BSF scenario produces a global warming impact of 8440 kg CO2, plant land use of 42.75 mg M2a, and terrestrial ecotoxicity of 34.03 kg 1.4 DCB.
