Abstract

Tofu industry with conventional processing has an environmental impact due to the tofu production process. The purpose of this study is to identify potential environmental impacts, analyze the factors that cause environmental impacts and provide recommendations for environmental impact management as an alternative plan by analyzing acceptable and environmentally friendly Life Cycle Analysis (LCA) using Simapro software. LCA is an approach to identify and analyze the environmental impact of all phases of a product's life cycle to determine which part has the greatest impact on the environment. The three main impacts of the Eco-Indicator 99 (H) method are carcinogens, respiratory inorganics, and climate change. Factors causing this effect are due to the use of electricity, firewood, and the use of chemicals in the form of coagulants. Alternative improvements that can be made to reduce the effects that occur include increasing the efficiency of the tool and replacing the acetic acid coagulant with nigarin and the result of the remaining fermentation of the deposition process.
