Abstract
PT. Ajinomoto Indonesia Mojokerto Factory implements a production system Monosodium Glutamate (MSG) using the Make To Stock method with while maintaining the quality of the MSG. involving bacterial activity Brevibacterium lactofermentum. In the production process, PT. Ajinomoto Indonesia using 2 systems, starting from the treatment of raw materials to the fermentation process using a batch system while from the isolation process to the purification occurs in a continuous system. Broadly speaking, the process of making Monosodium Glutamate (MSG) from molasses until it becomes crystals ready to be circulated through some steps. The first stage is pretreatment, then the fermentation stage, the third namely the stage of isolation, and purification, drying to the stage of sifting
