Abstract

Germination of red rice with calcium chloride (CaCl2) supplementation at specific time intervals can stimulate the formation of secondary metabolites, particularly GABA and bioactive compounds. Food products enriched with GABA and bioactive compounds are believed to provide various functional health benefits, ranging from acting as an inhibitory neurotransmitter to scavenging free radicals. This study aims to analyze the effect of CaCl2 application patterns and germination duration on GABA components, phytochemical compounds, antioxidant capacity, and metabolic profiles. Germination with various different CaCl2 application patterns proved effective in increasing the accumulation of GABA compounds, flavonoids, and antioxidant capacity, although the total phenolic and anthocyanin contents tended to be lower compared to the control germination (without CaCl2). The results of this study show that 48-hour germination with gradual CaCl2 application was the most optimal treatment based on GABA parameters and phytochemical compound outcomes. Furthermore, metabolomic analysis identified that the application of CaCl2 during the germination process triggered both increases and decreases in metabolites through several primary metabolic pathways.
