Abstract
Jackfruit peel is a lignocellulosic biomass waste with considerable potential as an alternative raw material for lactic acid production through bioconversion, as it contains lignocellulose that can be converted into simple sugars. This study aims to synthesize lactic acid from jackfruit peel and to evaluate the effects of substrate mass and Simultaneous Saccharification and Fermentation (SSF) duration on lactic acid concentration in order to determine the optimum process conditions. The SSF process was conducted using Aspergillus niger as the saccharification agent and Lactobacillus plantarum as the fermentation agent following a delignification pretreatment. Substrate mass variations of 3, 5, 7, 9, and 11 grams were applied with SSF durations of 12, 24, 36, 48, and 72 hours. Lactic acid concentration was determined using acid– base titration, while pH changes were monitored throughout the process. Statistical analysis using two-way ANOVA indicated that both substrate mass and SSF duration significantly affected lactic acid production, with p-values < 0.05. The highest lactic acid concentration of 2.10% was achieved at a substrate mass of 5 grams and an SSF duration of 48 hours, accompanied by a decrease in pH, indicating enhanced fermentation activity. These findings demonstrate that SSF is an effective approach for lactic acid production from jackfruit peel and has strong potential for sustainable and value-added utilization of biomass waste.
