Abstract

Quality control is an process aimed at ensuring that product meets company specification. Kopi Kutjur is an agro-industrial company producing robusta coffee roasted beans, faces challenges due to a high defect rate that reduces the quantity of marketable products. This study aims to describe the quality control process and evaluate improvements of robusta coffee roasted beans Kopi Kutjur. The sample used in this study was 177,534 grams of robusta coffee roasted beans from 48 roasting batches, along with 5 key informants selected. Primary data was collected through interviews supported by questionnaires. The first objective was analyzed descriptively using SIPOC diagram, while the second was analyzed using Six Sigma DMAIC methodology. The results showed 1) SIPOC diagram effectively illustrates process conditions prior to further measurement and analysis. 2) three main defects were identified, namely scorching (39%), cracked beans (33%), and quakers (28%). The DPMO value was 34,047.94 with a sigma level of 3.32, suggest that the process aligns with the average performance of the Indonesian industry, although improvements are still required to achieve zero defect. The study found that six sigma based quality control is shown to reduce production defect of robusta coffee roasted beans at Kopi Kutjur.
