Abstract

Quality control is essential to ensure that Arabica green coffee beans comply with established quality standards. This study aimed to determine the defect level, evaluate the stability of the production process, and identify the causes of defects and the corresponding corrective actions in the production of Arabica green coffee beans at Kopi Bontugu, Trawas, Mojokerto Regency. The analysis employed the Statistical Process Control (SPC) approach using check sheets, Pareto diagrams, p-control charts, and cause-and-effect diagrams. The results revealed that total defects amounted to 33,489 grams out of 319,500 grams of production. Broken beans and perforated beans were the predominant defects, accounting for a cumulative 90.2% of all defects. The p-control chart indicated that the process was not yet statistically under control, as several observations exceeded the control limits. Cause-and-effect analysis showed that broken beans were primarily associated with raw material, machine, and method factors, whereas perforated beans were related to human, method, and environmental factors. Improvement efforts should focus on selective harvesting, moisture control prior to hulling, regular machine maintenance, more rigorous sorting practices, and the provision of proper storage facilities.
