Abstract

The main food of the community is sugar, whether consumed raw or processed. The F&B (Food and Beverage) industry is currently increasingly using glucose syrup (liquid sugar). The fruit of the siwalan tree (Borassus flabellifer L.) is considered agricultural waste. The skin of the siwalan fruit is often used as animal feed or discarded as waste in Indonesia, the cellulose content of siwalan fiber waste is higher than that of corn cobs, so it is predicted to produce a higher glucose concentration. To keep the costs relatively low, the process of producing liquid glucose from siwalan fiber waste is carried out using cellulase enzymes. This study was conducted using variable conditions or variables of cellulase enzyme volume and saccharification time. by going through 3 stages: pretreatment or material preparation, hydrolysis, and saccharification. The highest glucose content produced was 69% Brix or 33.81% reducing sugar. and the largest yield was 79.4838%, with an enzyme volume of 25 ml at a saccharification time of 84 hours.
