Abstract

Surabaya holds immense potential for developing culinary tourism rooted in cultural diversity. The presence of various ethnic groups including European, Chinese, Arab, and others has shaped a rich culinary identity, however, there is currently no integrated venue capable of accommodating culinary activities, education, recreation, and cultural interaction within a single precinct. Consequently, the design of the Multicultural Thematic Culinary Center in Surabaya aims to create a thematic culinary hub that serves not only as a tourist destination but also as a space for cultural preservation, education, and the reinforcement of the city's multicultural identity. The design process began with a literature review, precedent studies, field observations, and an analysis of site aspects, user activities, spatial requirements, circulation, utilities, structural systems, and building form. Site selection was based on the area's potential, accessibility, spatial planning compatibility, and its capacity to support tourism and the creative economy. The analysis resulted in the theme "A Place Seasoned by Culture," utilizing a Symbolic Architecture approach this translates cultural diversity through spatial elements, form, facades, materials, landscaping, and user experiences, rather than through the literal adoption of cultural symbols. The design concept is realized through adaptive massing, circulation patterns connecting various culinary and activity zones, open spaces for social interaction, and architectural elements that reflect harmony, diversity, and cultural interconnectedness. Planned facilities include culinary areas, educational spaces (such as exhibition areas and cooking classrooms), recreational zones (such as gardens), and other supporting facilities designed to create an educational, recreational, and inclusive spatial experience. Ultimately, the Multicultural Thematic Culinary Center is envisioned as a new culinary tourism landmark in Surabaya that reinforces the city's identity as a meeting point for diverse cultures, while simultaneously fostering the preservation of culinary heritage, the growth of the creative economy, and the enhancement of sustainable public spaces.
