Abstract
The Field Work Practicum (PKL) at the sugar factory aims to practically apply factory operational theories, specifically in the conversion process of sugarcane juice into White Crystal Sugar (WCS), which encompasses the milling, purification, evaporation, boiling, centrifugation, and finishing stations. Within this process sequence, the Mean Grain Size (MGS) parameter plays a crucial role as an indicator of the average sugar crystal size, which must comply with the SNI 3140-3:2010 standard (0.8 to 1.2 mm) to maintain the product's market value. This specific task analysis was conducted to identify the magnitude and causal factors of the quality decline in MGS along the processing line between A-centrifugal sugar and SHS (Superior Head Sugar) to prevent the final product from quality disqualification. The procedures were executed at PT. PG. Rajawali I PG. Krebet Baru I, focusing specifically on the centrifugation station. Data collection was performed through periodic sampling at two primary nodes: the output of A-centrifugal sugar and the final SHS product. The obtained samples were subsequently tested for MGS quality using the sieve analysis method. In addition to size testing, visual observations of the morphological structure of the sugar grains were conducted using a microscope to analyze the percentage of mechanical crystal damage resulting from the influence of the transport and separation equipment employed. The test results indicated that the MGS value of A-centrifugal sugar ranged from 0.96 to 1.03 mm, while the SHS sugar ranged from 0.86 to 0.93 mm, both of which generally still conformed to the SNI quality standards. However, a decline in MGS values from the A-centrifugal to the SHS sugar was recorded, with an average reduction of 10.12%. This physical quality degradation was influenced by three operational equipment factors: the dissolution of the crystal surface within the mixer, and the operational conditions of the SHS centrifugation, which include wash water temperature, total washing duration, and the impact forces exerted during the spinning and scraping processes.
