Abstract

The soy sauce industry in Surabaya, East Java Province, is part of the food industry sector that continues to develop in line with the increasing public consumption of fermented soybean-based products. The soy sauce production process involves several stages, including fermentation, cooking, filtration, and mixing, which collectively generate wastewater with very high organic loading characteristics. In one soy sauce industry in Surabaya, the wastewater flow rate was recorded at 836.37 m³/day, with a highly acidic pH of 3.82, indicating the dominance of organic acids produced during the fermentation process. In addition to pH, the main pollutant parameters in this soy sauce wastewater are biochemical oxygen demand (BOD) of 2,320.54 mg/L, chemical oxygen demand (COD) of 5,984.695 mg/L, and total suspended solids (TSS) of 1,850 mg/L.
