Abstract
Good Manufacturing Practices (GMP), also commonly known as Good Food Production Practices, are guidelines that contain methods for producing processed food properly and meeting predetermined requirements to ensure that the processed food produced is guaranteed in quality, safe, and suitable for consumption. This research aims to analyze corrective actions from GMP analysis results that do not meet standards. Qualitative data analysis techniques were applied using NVivo software, involving 10 informants who are employees of CV Dua Putri Sholehah from the production, packing, and peeling departments. The research results show that the most problematic GMP aspect is the employee health and hygiene aspect, specifically regarding compliance with the use of Personal Protective Equipment (PPE), with the root cause being weak regulations and supervision. The recommended corrective actions include optimization of regulations and supervision. These efforts include improvement of regulations and SOPs, strengthening of the supervision system, consistent enforcement of sanctions, enhancement of socialization and education regarding the importance of GMP implementation, as well as conducting regular audits and evaluations.
