Abstract
Jam is a processed or preserved fruit product with a semi-solid texture, resembling a thick porridge, having a sweet taste with the aroma and flavor of the original fruit. In this study, pineapple peel jam will be made with the addition of lemon peel extract and sucrose. The purpose of this study was to determine the effect of adding lemon peel extract and sucrose on the physicochemical and organoleptic characteristics of pineapple peel jam and to determine the best treatment from the variables of adding lemon peel extract and sucrose that produces pineapple peel jam products with the best physicochemical and organoleptic characteristics and is preferred by panelists. This study used a Factorial Completely Randomized Design (CRD) with two factors and three replications. Factor I was the addition of lemon peel extract consisting of three variables, namely (20%, 28%, 36%). Factor II was the addition of sucrose consisting of three levels of 40%, 50%, 60%. The data obtained were analyzed using analysis of variance (ANOVA), and if there were significant differences, it would be continued with the DMRT 5% advanced test. The best treatment results were obtained in the treatment of adding 28% lemon peel extract and 40% sucrose with the characteristics of 38.548% water content, pH value 3.87, vitamin C content 25.461%, antioxidant activity 35.806%, reducing sugar content 5.94%, gel strength 1.339 N, spreadability 10.067 cm, ash content 1.112%, and hedonic test of aroma 3.5 (slightly like), taste 3.6 (slightly like), texture 2.6 (slightly like), color 2.8 (slightly like).
