Abstract
PT ISM. Tbk. Bogasari Flour Mills Surabaya initially operated with two milling units, namely a milling unit with a production capacity of 1,200 tonnes/day. During the period March 2024 to August 2024, the Cakra Kembar wheat flour product had the highest production level of 163,662 tonnes. However, the high production rate of Cakra Kembar wheat flour resulted in a high product defect rate of 30,327 tonnes, with a defect percentage of 18.53% which exceeds the Company's defect tolerance standard of 3.84%. Based on the problems contained above, the research objectives to be achieved, namely knowing the quality of twin cakra flour products and providing improvement recommendations to improve the quality of twin cakra wheat flour products at PT. ISM. Tbk. Bogasari Flour Mills Surabaya. Based on the results of the RPN calculation for FMEA of twin chakra flour products, several risks are obtained that have a priority level of quality control proposals to minimise the possibility of failure. The calculation of the RPN value of 150 of the type of dull flour colour defect found in the milling process with the cause of the defect is the roller mill on the milling machine that is worn or lack of maintenance can reduce milling efficiency and produce flour with poor colour quality with improvement recommendations Replace the worn roller mill on the milling machine with a new roller mill and replace it with a new roller mill.
