Abstract

Food safety is an important aspect of sanitation science. There are many environments that are directly or indirectly related to human food supply. The Food and Drug Monitoring Agency (BPOM) has issued a food safety guarantee system aimed at the quality and safe food industry, namely Good Processed Food Production Methods or what is known as Good Manufacturing Practices. The aim of this research is to: identify the level of suitability of good processed food production methods for tempe products in the tempe home industry in Sepande Village based on ministry regulations, analyze the correlation of the level of suitability of production methods to sales volume, analyze the correlation of the level of suitability of production methods to profits. The location was chosen using purposive sampling with a total of 50 tempe craftsmen as respondents. This research uses quantitative descriptive methods. The first objective of the analysis is descriptive quantitative using GAP Analysis, the second objective is to collect data and process data from the questionnaire by giving weight to each answer to a Likert scale question, the third objective is the profit analysis method, providing a list of questions using the Likert scale method. The data obtained was then processed using the SPSS application program with the Spearman rank correlation test. The results of the research show that the assessment of aspects of Good Manufacturing Practices in Sepande Village is in accordance with ministry regulations, there is a relationship between good processed food production methods and sales volume, there is a relationship between good processed food production methods and profits.
