Abstract

Indonesia, as a maritime country with 70% of its territory in the form of oceans, has great potential in salt production. Most of the salt is produced conventionally through the process of seawater evaporation by pond farmers, producing NaCl salt at a content of 85%-95%. In 2019, national salt production reached 2.85 million tons, but declined to 1.37 million tons in 2020 and 1.09 million tons in 2021, far below the Ministry of Maritime Affairs and Fisheries (KKP) target of 2.1 million tons per year. This decline in production is due to seasonal factors, such as wet droughts, and lack of effective utilization of technology. Salt, as a staple food and source of the body's electrolytes, is generally produced through evaporation which takes a long time if done traditionally.
