Abstract

The objective of this study is to compare the extraction of pectin from durian peel using ultrasonic and conventional methods; to determine the effect of HCl solution pH and extraction time on pectin yield and methoxyl content. The study used extraction methods assisted by ultrasonic waves and conventional techniques at a frequency of 40 KHz and a temperature of 70ºC with varying extraction times of 15, 45, and 75 minutes, as well as HCl solution pH levels of 1.5, 2.5, and 3.5. The highest pectin yield was obtained using ultrasonic waves at a frequency of 40 KHz, a temperature of 70ºC for 75 minutes, and an HCl solution pH of 1.5, yielding 7.081%, while the conventional method under the same temperature, extraction time, and HCl solution pH conditions resulted in 1.8646%. The lowest methoxyl content was achieved using ultrasonic waves at a frequency of 40 KHz, a temperature of 70ºC for 15 minutes, and an HCl solution pH of 1.5, with a value of 5.9%, whereas the conventional method under the same temperature, extraction time, and HCl solution pH conditions yielded 6.11%.
