Abstract

Glucose Syrup Factory from Tapioca Flour using Enzymatic Hydrolysis Process with a capacity of 40,100 tonnes/year will be established in Kedungbocok, Kab. Sidoarjo, East Java. This factory operates 24 hours a day, 330 days a year. The raw material used is Tapioca Flour obtained from PT. Budi Starch & Sweetener, Sidoarjo. Auxiliary raw materials for α-amylase and glucoamylase enzymes obtained from PT. Sorini Agro Corpindo tbk, Pasuruan, East Java and hydrochloric acid obtained from PT. Petrokimia Gresik, Gresik, Activated carbon obtained from PT. Surya Mahakam Agung Chemical, as well as Calcium Chloride obtained from PT. Solvay Manyar, Gresik. Glucose syrup is widely used in the candy, ice cream and syrup industries. Apart from that, glucose is also widely used in pharmaceutical factories, including for making infusion solutions, as well as making tablets as an outer layer so they taste sweet. Description of the process of making glucose syrup using the enzyme hydrolysis process. Tapioca flour with a starch content of 87.95% and water 11.10% is mixed with water with the addition of CaCl2 which functions as an enzyme stabilizer in the mixing tank until a starch slurry with a concentration of 35% is formed. The starch slurry is fed to the liquefaction reactor at a temperature of 95oC with a pressure of 1 atm for 2 hours with the addition of the α-amylase enzyme to hydrolyze starch into dextrin. After the liquefaction process, the solution is fed to the saccharification reactor. In the saccharification reactor, the enzyme glucoamylase is added at a temperature of 60 oC and a pressure of 1 atm for 24 hours to convert dextrin and remaining starch into glucose. After the saccharification reactor, there is a decolorization process or color absorption from the glucose solution in the carbonation tank using activated carbon absorption media for 30 minutes. Activated carbon has the ability to free the glucose solution from unwanted impurities. The glucose solution is then fed to a filter press to separate the cake and impurity components attached to the glucose solution. After the filtering process, the glucose solution is pumped to the ion exchanger for the demineralization process. Then the solution is fed to the evaporator to be concentrated until the glucose solution level is 75% and with vacuum evaporation at 0.474 atm and a temperature of 80ºC. The concentrated glucose solution is then cooled to a temperature of 40ºC and then fed to the product silo.
