Abstract

Glucose Syrup Factory from Tapioca Flour using the Hydrolysis Process Enzymatic with a capacity of 40,000 tons/year will be established in Tarik, Sidoarjo, Java East. This factory operates 24 hours a day, 330 days a year. Material The raw material used is Tapioca Flour obtained from PT. Budi Starch & Sweetener, Sidoarjo. Auxiliary raw materials for α-amylase and glucoamylase enzymes obtained from PT. Sorini Agro Corpindo tbk, Pasuruan, East Java and Asam Chloride obtained from PT. Petrokimia Gresik, Gresik, Activated carbon obtained from PT. Surya Mahakam Agung Chemical, as well as Calcium Chloride obtained from PT. Solvay Manyar, Gresik. Glucose syrup is widely used in industry candy, ice cream, syrup. Apart from that, glucose is also widely used internally pharmaceutical factories, among others, for making infusion solutions, as well as manufacturing The tablets are the outer layer so they taste sweet. Description of the manufacturing process glucose syrup by enzyme hydrolysis process. Tapioca Flour contains 87.95% starch and 11.10% water mixed with water with the addition of CaCl2 functions as an enzyme stabilizer in the mixing tank until it is formed 35% concentration starch slurry. The starch slurry is fed to the liquefaction reactor temperature 95 °C and pressure 1 atm for 2 hours with the addition of α-amylase enzyme to hydrolyze starch into dextrin. After the liquefaction process, the solution fed to the saccharification reactor. In the reactor saccharification is added with the enzyme glucoamylase at a temperature of 60 °C and a pressure of 1 atm for 24 hours to convert dextrin and remaining starch into glucose. After the reactor saccharification, the process of decolorization or absorption of color from the glucose solution occurs in a carbonation tank using activated carbon absorber media for 30 minutes. Activated carbon has the ability to liberate solutions glucose from unwanted impurities. The glucose solution is then fed to the filter press to separate the cake and the attached impurity components in glucose solution. After the filtering process, the glucose solution is pumped into the ion exchanger for the demineralization process. Then the solution is fed to evaporator to concentrate to 75% glucose solution content and with vacuum evaporation 0.474 atm and temperature 80ºC. Concentrated glucose solution then cooled to a temperature of 30ºC and then fed to the tank product storage.
