Abstract
ABSTRACK Food waste has become a common issue for various countries, one of which is Indonesia. Food waste has an impact on food security, the environment and the economy, of the 1.3 billion tons of food suitable for consumption, one third is wasted along the chain. Thus, food waste is a serious environmental problem. For this reason, proper handling is needed to overcome it with good food waste management. The initial effort to find out the right strategy requires a measurement of the amount of existing food waste and the environmental impact of the waste management scenario that is formed. To determine the amount of generation, the EPA method was used to determine the quantity and characteristics of food waste. After knowing the quantity and characteristics of food waste, run the data with scenarios to determine the magnitude of the impact. For running using Life Cycle Assessment (LCA) with the recipe method and cumulative energy demand. The results obtained after sampling at Reny supermarket were the quantity of food waste in the fruit category of 131 kg/week, grains 0.43 kg/week, fish 0.58 kg/week, meat 1.78 kg/week, eggs 0.13 kg/week. From the results of the quantity, the highest percentage composition of food waste is obtained, namely meat 90%, meat 4%, fish 3%, grains 2%, eggs 1%. The scenarios used in this study are the Black soldier fly (BSF) scenario, the gasification scenario, and the landfill process. In the Black soldier fly (BSF) scenario, the global warming impact category is the highest impact category, namely 0.072 MJ. In the gasification scenario, the impact category for Ozone formation, human health is the highest impact category, namely 0,0365 MJ.
