Abstract
Dairy products have complete nutrition, making the products prone to damage caused by microorganisms. The high protein content in milk increases the potential for quality deterioration caused by pathogenic bacteria. Processing and packaging can prolong the shelf life of dairy products. Milk is processed using UHT technology to inactivate microorganisms to achieve commercial sterility. Aseptic packaging aims to prevent recontamination of commercially sterile products. The packaging that will be used is sterilized first using hot air and Hydrogen Peroxide (H2O2) to inactivate the microorganisms that are on the surface of the packaging material. The integrity of the packaging affects the final quality of the dairy product because a leakage in packaging can lead to recontamination of commercially sterile products. To prevent any packaging from leaking, packaging integrity tests are carried out periodically during production to analyze the capability of the packaging process. The tests carried out can be in the form of destructive tests or non-destructive tests on packaged samples. Detection of a weak seal on the packaging is needed so that corrective action can be taken to prevent an increase in the quantity of low quality products.
