Abstract

Pineapple production produces pineapple skin waste from the peeling process. Solid waste containing sugar can be utilized into other products. Efforts to treat pineapple peel waste need to be done to add value to pineapple processing. Ligninolytic enzyme is one of the enzymes that can be used as a catalyst in the cellulose fermentation process. Enzymes function to break down lignin so that fermentation runs faster and more efficiently. This study aims to make bioethanol from the ligninolytic enzyme fermentation process with pineapple skin. The enzyme concentrations used were 30, 35, 40, 45 and 50%. The analysis was carried out on the bioethanol content in the fermented samples. The results showed that the efficiency of using ligninolytic enzymes as catalysts in the fermentation process with enzyme levels of 50% and fermentation time for 12 days obtained bioethanol levels of 3.20%.
